Fried chicken is the perfect treat and can be created as a snack or part of a main meal. Creating delicious fried chicken is a snap when you know how and this foolproof method is sure to make your family and friends sit up and take notice.

Choosing the Perfect Chicken

First, you will need some chicken. Fresh is always best, but if you choose to use frozen chicken make sure it is fully defrosted before you use it. Cut the chicken into pieces such as drumsticks, thighs and breasts. If you are using the whole chicken, try to find one that is around one kilo in weight, as larger chickens tend to take too long to cook and the coating will become overcooked.

Preparing the Seasoning

Take one cup of plain flour and add a tablespoon of salt, a teaspoon of ground black pepper, a quarter of a teaspoon of cayenne pepper to give the coating a bit of a kick, half a tablespoon of garlic powder, a tablespoon of onion powder, a teaspoon of dried mixed herbs and half a cup of instant mashed potato powder.Preparing the Seasoning The instant mashed potato powder is the secret ingredient that will help make the coating very crunchy. Mix the seasoning together well in a large bowl. Of course, you can experiment with the proportions of the ingredients if you wish to turn up the heat a little or bring out the taste of the herbs more.

Coating the Chicken

Place a mixture of beaten eggs with a little water in a bowl and dip each piece of your chicken into the mixture. Take care to make sure that all parts of your chicken piece is covered with the mixture. Next, roll the piece of chicken in your flour and seasoning mix and place it onto a plate. Repeat this step for each of your pieces of chicken and set the plate to one side for around twenty minutes.
